There are some nights when I want to make a healthy dinner but have zero interest in making an elaborate side dish.

That’s it.

Is Broccoli Slaw Low Histamine?

If you’re following a low-histamine diet, you probably already know that food lists aren’t always as straightforward as we’d like them to be.

Broccoli, cabbage, carrots, and fresh parsley are generally considered foods that many people with histamine intolerance tolerate well. However, individual tolerance matters.

Histamine intolerance isn’t simply a matter of having a list of “good” and “bad” foods. Your overall histamine load, gut health, stress, hormones, food freshness, and your own individual sensitivities can all influence how you respond to a particular food.

That’s why I encourage you to use low-histamine recipes as a starting point rather than assuming every recipe will work perfectly for you. This recipe is probably best to try after you have made some introductions and have a good grasp on your personal tolerance.

And there’s one ingredient in this recipe that deserves a little more discussion: apple cider vinegar.

Apple Cider Vinegar and Histamine: Is It Low Histamine?

This is one of those areas where you’ll find conflicting information online. Some low-histamine food lists recommend avoiding vinegar, while other people with histamine intolerance find that they can tolerate certain vinegars without a problem. Sometimes it’s a matter of dose. You may tolerate a teaspoon, but a tablespoon sends your bucket spilling over.

Vinegar is a fermented food, and fermented foods can be problematic for some people with histamine intolerance because fermentation can increase biogenic amines, including histamine.

That doesn’t necessarily mean that everyone with histamine intolerance needs to avoid apple cider vinegar forever.

The Swiss Interest Group Histamine Intolerance (SIGHI) list has apple cider vinegar listed as a Score (1) faintly problematic, minor symptoms possible, test individual tolerance.

Tolerance is individual.

If you find that you react to apple cider vinegar, you can sub with white vinegar (0) on SIGHI list, generally well tolerated.

If you’ve noticed that vinegar seems to trigger flushing, itching, hives, headaches, digestive symptoms, or other symptoms for you, you may want to leave it out of this recipe.

If you’re unsure how you tolerate it, you can make the slaw without the vinegar and see how you do. You can also experiment with adding a small amount later when you’re feeling stable.

And remember: a food being “low histamine” on a chart doesn’t automatically mean your body will tolerate it. Your own symptom patterns are valuable information.

What About Apple Cider Vinegar’s Health Benefits?

Apple cider vinegar is often promoted for everything from blood sugar regulation to digestion and detoxification. Some of those claims are much stronger than the available evidence supports.

For Histamine Harmony recipes, I don’t include apple cider vinegar because it’s a magical health food. I include it because it adds a delicious bright, tangy flavor to this slaw. That’s it.

You don’t need to force yourself to eat an ingredient because someone on the internet says it’s good for you. If you tolerate apple cider vinegar, enjoy it. If you don’t, skip it.
